Method
- Soak cashews in hot water for 15 minutes. Drain well.
- Add soaked cashews, mint leaves, cilantro leaves, green chilies, lemon juice, salt, and water to a blender.
- Blend until smooth and creamy.
- Taste and adjust salt, lemon juice, or spice if needed.
- Serve immediately or store for later use.
Notes
- Add a small piece of ginger for extra flavor.
- Thin with extra water or lemon juice to use as a salad dressing.
- Store in an airtight container in the refrigerator for 3–4 days.
