Cashew Mint Cilantro Chutney

A creamy, dairy-free cashew mint cilantro chutney made with fresh herbs. Perfect as a sandwich spread, dip, or salad dressing.

Ingredients
  

  • ¼ cup cashews soaked in hot water
  • 1 handful fresh mint leaves
  • 1 handful fresh cilantro coriander leaves
  • 2 green chilies adjust to taste
  • 1-2 tbsp lemon juice to taste
  • Salt to taste
  • 2 tbsp water adjust for consistency

Method
 

  1. Soak cashews in hot water for 15 minutes. Drain well.
  2. Add soaked cashews, mint leaves, cilantro leaves, green chilies, lemon juice, salt, and water to a blender.
  3. Blend until smooth and creamy.
  4. Taste and adjust salt, lemon juice, or spice if needed.
  5. Serve immediately or store for later use.

Notes

  • Add a small piece of ginger for extra flavor.
  • Thin with extra water or lemon juice to use as a salad dressing.
  • Store in an airtight container in the refrigerator for 3–4 days.
