Crispy Sesame Peanut Tofu Bowl

A crispy, sweet savory tofu bowl coated in sesame peanut glaze and served with vibrant stir fried vegetables.

Ingredients
  

  • 14 oz firm tofu pressed and cubed
  • 2 tbsp avocado oil
  • 2 tbsp corn flour
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • 1 tsp red pepper or chili powder
  • Salt to taste
  • 2 tbsp soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp vinegar rice or apple cider
  • 2 tbsp roasted sesame seeds
  • 2 tbsp roasted peanuts slightly crushed
  • Stir fried vegetables of your choice bell peppers, broccoli, carrots, snap peas etc

Method
 

Prep the tofu
  1. Press tofu for 15 to 20 minutes to remove excess water.
  2. Cut the tofu into medium sized cubes.
  3. In a bowl, add corn flour, turmeric, black pepper, red pepper and salt.
  4. Add the tofu cubes and toss until evenly coated.
Pan fry the tofu
  1. Heat 1 tbsp avocado oil in a pan.
  2. Add the coated tofu and fry until crispy and golden on all sides.
  3. Remove the tofu and set aside.
Make the glaze
  1. In the same pan, add soy sauce, maple syrup and vinegar.
  2. Let the mixture simmer for 1 to 2 minutes until slightly thickened.
Coat the tofu
  1. Add the tofu back into the pan.
  2. Sprinkle roasted sesame seeds and crushed peanuts.
  3. Toss gently until the tofu is coated.
Serve
  1. Plate the tofu with stir fried vegetables on the side.
  2. Top with extra sesame seeds or peanuts before serving.

Notes

Press tofu well for the crispiest texture.
Add chili flakes or sriracha to make it spicy.
Substitute peanuts with cashews or almonds if preferred.
For an oil free version, bake the tofu instead of pan frying.
Increase the ratio of sauce if serving over noodles or rice.
