Quinoa Protein Salad

A bright, protein packed quinoa salad with citrus dressing, fresh herbs, crunchy nuts and colorful vegetables.

Ingredients
  

  • 1/4 cup cooked quinoa
  • 1/4 cup cooked moong beans or cooked chickpeas
  • 2 tbsp chopped tomatoes
  • 1/2 cup mixed vegetables of your choice carrots, cucumber, more tomatoes etc
  • 2 tbsp pomegranate seeds
  • 2 tbsp chopped nuts
  • 1/4 cup fresh orange juice
  • 2 tbsp chopped cilantro and mint
  • 1/2 tsp black pepper
  • Salt to taste

Method
 

  1. Add cooked quinoa to a mixing bowl.
  2. Add cooked moong beans or chickpeas.
  3. Add chopped vegetables and tomatoes.
  4. Add pomegranate seeds and chopped nuts.
  5. In a separate bowl, prepare the dressing by mixing fresh orange juice with cilantro, mint, black pepper and salt.
  6. Pour the dressing over the salad.
  7. Mix well and serve immediately.

Notes

Use freshly squeezed orange juice for the best flavor.
Add more herbs if you prefer extra freshness.
Toast nuts lightly to enhance their crunch.
Add dates or raisins if you want natural sweetness.
Chill the salad for 20 minutes for a refreshing version.
