Refreshing Pineapple Salad

A crisp, colorful pineapple salad with fresh vegetables, herbs and lemon that is refreshing and naturally sweet.

Ingredients
  

  • 1 cup pineapple chopped
  • 1/2 cup cucumber chopped
  • 1/4 cup tomato chopped
  • 1/4 cup carrot chopped
  • 1/2 cup bell pepper chopped
  • 1/2 tsp ginger minced
  • 2 tbsp cilantro chopped
  • 1 tbsp mint chopped
  • 1 tbsp nuts of your choice finely chopped
  • Black pepper to taste
  • Salt to taste
  • Squeeze of lemon juice

Method
 

  1. Add the chopped pineapple to a mixing bowl.
  2. Add carrots, tomatoes, cucumbers and bell pepper.
  3. Add cilantro, mint and ginger.
  4. Season with black pepper, salt and lemon juice.
  5. Mix well until everything is evenly combined.
  6. Add nuts of your choice if you want extra crunch.
  7. Serve immediately

Notes

Use ripe, sweet pineapple for best flavor.
Chill all ingredients beforehand for a refreshing salad.
Add chili flakes or jalapeƱo for a spicy version.
Walnuts, peanuts or cashews work well for crunch.
Do not add lemon too early if prepping ahead; add before serving.
