Ingredients
  

  • 7-8 mushrooms
  • ¼ tsp turmeric
  • ¼ cup sooji semolina
  • Red chilli powder to taste
  • Salt to taste
  • Oil for frying preferably coconut oil

Method
 

  1. Clean mushrooms thoroughly and cut them into your preferred size.
  2. Add salt, turmeric, and red chilli powder, mixing gently without marinating.
  3. Coat the mushrooms evenly with semolina (or bread crumbs as a substitute).
  4. Heat oil in a pan on medium flame.
  5. Place mushrooms on the pan without covering and shallow fry on both sides for 2–3 minutes.
  6. For extra crispiness, turn the flame high for one minute, switch it off, and flip the mushrooms once before removing.

Tips
Avoid marinating after adding spices — it releases moisture and makes mushrooms soggy.
Semolina gives a crunchy coating; bread crumbs can be used for a softer texture.
Don’t cover the pan while frying — it helps retain crispness.
A final quick high-heat flip adds the perfect golden crunch.
