Sprouted Moong Salad

A fresh, protein rich sprout bowl filled with crunchy vegetables, lemon and peanuts for a vibrant, energizing meal.

Ingredients
  

  • 1 cup steamed moong sprouts
  • 1 small cucumber finely chopped
  • 1 tomato chopped
  • 1 small carrot grated or finely chopped
  • 1/4 cup diced bell pepper
  • Salt to taste
  • 1/2 tsp black pepper
  • 1 to 2 tbsp lemon juice
  • 2 tbsp pomegranate seeds
  • 1 to 2 tbsp crushed peanuts

Method
 

  1. Add the steamed moong sprouts to a mixing bowl.
  2. Add cucumber, tomato, carrot and bell pepper.
  3. Season with salt and black pepper.
  4. Add lemon juice and toss well to combine.
  5. Top with pomegranate seeds and crushed peanuts.
  6. Serve immediately to keep the bowl crunchy and fresh.

Notes

Add chopped coriander for extra freshness.
Include green chili or chili flakes for heat.
Sprinkle a little chaat masala for a tangy flavor.
Add a spoon of olive oil or sesame oil for richness.
Do not prep too far in advance; vegetables release water over time.
