Method
- Rinse the red poha in a bowl and drain well.
- Add a small pinch of salt.
- Add water as needed, less than 1/4 cup, mix lightly and cover for 10 minutes to soften.
- In a separate bowl, mix grated coconut, jaggery and cardamom powder.
- Add this mixture to the softened poha and combine gently.
- Add chopped nuts.
- Add the banana, mashing some pieces into the poha to help it bind.
- Serve immediately.
Notes
- Do not add too much water or the poha may turn mushy.
- Use soft jaggery so it blends easily.
- Adjust sweetness by adding more or less banana.
- Add raisins for extra sweetness if you like.
- Since this recipe is not cooked, consume within two hours for freshness.
