Vegan Avocado Toast

A creamy, fresh and satisfying avocado toast topped with microgreens and toasted sesame seeds for extra crunch and flavor.

Ingredients
  

  • 1 ripe avocado
  • 2 slices sourdough bread
  • A small handful of microgreens radish, broccoli, sunflower or mixed
  • 1 to 2 tsp fresh lemon juice
  • 1 tsp toasted sesame seeds
  • Freshly ground black pepper
  • Salt to taste
  • 1 tsp red chili flakes optional

Method
 

Toast the bread
  1. Toast the slices until they reach the crispness you prefer.
Prepare the avocado
  1. Scoop the avocado into a bowl.
  2. Add lemon juice.
  3. Mash lightly to your preferred texture.
  4. Season with salt and black pepper.
Assemble
  1. Spread the mashed avocado on the warm toast.
  2. Add microgreens generously.
  3. Sprinkle toasted sesame seeds.
  4. Finish with extra black pepper or a touch more salt.

Notes

  • Use ripe avocados for the best texture. If they feel soft when gently pressed, they are ready.
  • Toast sesame seeds fresh for deeper flavor. A minute in a dry pan is enough.
  • Choose sturdy bread like sourdough or multigrain to support the toppings.
  • For extra richness, add a drizzle of olive oil on top.
  • Add finely chop some vegetables, such as French beans, carrot or celery, into the avocado for even more flavor.
