Vegan Chia Pudding

A creamy, naturally sweet vegan chia pudding blended with strawberries and dates — simple to prep, wonderfully nutritious, and endlessly customizable.

Ingredients
  

  • 4-5 strawberries or fruit of choice
  • 1 cup vegan milk of choice
  • 3 dates adjust to taste
  • 2 tbsp chia seeds
  • Toppings: fresh fruit, nuts, raisins, or your favorites

Method
 

  1. Blend strawberries, vegan milk, and dates until smooth.
  2. Pour the mixture into a container or jar.
  3. Add chia seeds and mix very well so they don’t clump.
  4. Refrigerate for a few hours or overnight until thick and pudding-like.
  5. Top with fruit, nuts, raisins, or preferred toppings before serving.
  6. Optional: Freeze the pudding and blend for a thicker, creamier texture.

Notes

Stir the pudding again after 10 minutes to keep the chia seeds evenly distributed.
Use creamier plant milks (like coconut or oat) for a richer pudding.
Adjust the sweetness by adding more or fewer dates.
Frozen strawberries work just as well — thaw slightly before blending.
For a more smoothie-like texture, blend everything (chia included) after chilling.
