Star fruit salad

Star Fruit Salad

Some salads come alive because of a single ingredient — and star fruit is one of those gems. With its crisp texture, citrusy brightness, and natural sweetness, star fruit turns even the simplest preparations into something memorable. When the season arrives, this fruit feels like a gift: juicy, refreshing, and loaded with flavor without needing much embellishment. This Star Fruit Salad is built around that idea — a dish that celebrates the fruit exactly as it is.

The seasoning is intentionally minimal but thoughtfully chosen: a vibrant green paste made from cilantro, green chili, and salt; a sprinkle of black salt for depth; a touch of jaggery for balance; and just enough cayenne to lift the flavors. The result is a salad that’s tangy, spicy, lightly sweet, and incredibly refreshing. It’s a perfect example of how the right seasoning can elevate a fruit without smothering it. If you enjoy dishes that feel bright, clean, and rooted in seasonal produce, this salad will become a favorite.

Why You’ll Love It

Naturally refreshing: Star fruit brings citrusy brightness and crunch.

Seasonal goodness: A great way to enjoy this fruit when it’s at its best.

Balanced flavors: Tangy, sweet, spicy, and salty — all in harmony.

No cooking: Quick, simple, and perfect for hot-weather days.

Nutrient-rich: Packed with antioxidants and vitamin C.

Good To Know

Star fruit (carambola) has a unique quality: when sliced, it releases just enough juice to act like its own dressing. That’s why this recipe doesn’t need added water or oil — the fruit naturally creates the perfect base for the spice mix.

Crushing the cilantro and green chili by hand (or blending lightly) releases essential oils that taste brighter and more aromatic than chopped herbs. When mixed with the star fruit, this green paste clings to the slices, giving every bite flavor without masking the fruit’s natural crispness.

Black salt adds a savory depth that pairs beautifully with tropical fruits. Jaggery or any sweetener rounds out the acidity, creating a sweet–tangy–spicy combination that feels almost addictive. This technique turns a simple fruit into a layered, refreshing salad that celebrates seasonality and minimalism.

Serving Suggestions

  • Pair with simple meals like rice bowls, stir-fries, or grilled vegetables.
  • Add to a tropical fruit platter.

Star Fruit Salad

5 from 1 vote
A crisp, tangy star fruit salad brightened with a fresh green herb paste, black salt, jaggery, and a hint of spice.
Course: Salad

Ingredients

  • 3 medium star fruits
  • 1 bunch cilantro chopped
  • 1 green chili or to taste
  • ¼ tsp salt for the spice mix
  • ½ tsp black salt
  • 1 tsp jaggery or sweetener of choice
  • ¼ tsp cayenne pepper or red chili powder

Method

  1. Trim both ends of the star fruit and slice into star-shaped rounds. Remove any seeds and set aside.
  2. Grind cilantro, green chili, and ¼ tsp salt using a blender or a mortar and pestle. Do not add water — the herbs will release moisture naturally.
  3. Add the green paste to the sliced star fruit and toss gently.
  4. Add black salt, jaggery, and cayenne pepper. Mix until well coated.
  5. Enjoy fresh for maximum crunch and brightness.

Notes

Choose ripe star fruit — slightly yellow with green edges for best flavor.
Adjust sweetness based on how tangy your star fruit is.
Add more chili if you prefer a spicier salad.
Serve immediately; star fruit softens if kept mixed for too long.
Add a squeeze of lemon for extra brightness if your fruit is mild.
