Ingredient Notes

Raw Bananas: Firm, starchy bananas are essential for texture. Slice evenly to ensure they cook uniformly and hold the coating.

Semolina & Rice Flour: Semolina gives a crunchy outer layer, while rice flour ensures the coating adheres and stays crisp. A combination creates the perfect texture.

Spice Mix: Provides depth, warmth, and subtle heat, balancing the natural starchiness of the bananas.

Coconut Oil: Adds flavor and helps achieve a golden, crisp crust; other neutral oils work too.

  • 1 tbsp ginger green chilli paste
  • 1 tsp lemon juice
  • 2 tbsp semolina or substitute with bread crumbs

Method

  1. Wash raw bananas, cut off both ends, and peel using a knife or peeler.
  2. Slice vertically into medium-thick pieces.
  3. If you’re preparing the spice mix, keep slices in salt water to prevent browning.

  5. Drain banana slices and coat them evenly with the spice mix; marinate for 10 minutes.
  6. Prepare coating with semolina and rice flour (or bread crumbs and rice flour combination).
  7. Heat oil in a pan on low-medium flame.
  8. Place marinated banana slices on the pan, cover, and cook each side for 2–3 minutes.
  9. Check doneness by piercing with a fork — if it passes through easily, they’re ready.

Notes

Tips
Soaking banana slices in salt water prevents them from turning brown.
Adding a bit of rice flour to semolina ensures the coating stays crunchy.
Avoid using only rice flour — it won’t give the same crisp texture.
Coconut oil enhances the flavor, but any cooking oil works well.
Covering the pan helps cook the bananas evenly while keeping them soft inside.

I liked how straightforward this recipe was. The raw bananas browned nicely and stayed soft inside. Shallow frying worked better than I expected, and the texture was spot on. Great everyday dish.
