Good To Know
Raw papaya is incredibly versatile in Indian cooking. When unripe, it has a pale green color and a neutral flavor that makes it perfect for stir fries. It softens quickly, absorbs seasonings and adds a mild sweetness as it cooks.
The key to this stir fry is the tempering. cumin seeds, and green chillies create a fragrant base that infuses the papaya as it steams gently in its own moisture. Green chilies introduce light heat without overpowering the dish. Freshly grated coconut added at the end enhances the texture and adds a soft, creamy balance to the spices.
Raw papaya cooks best on low flame, allowing it to soften evenly. A small splash of water can help prevent sticking, but the dish is meant to be dry, with each cube coated lightly in spices and coconut.
