Why You’ll Love It

Light & Refreshing: Crisp cucumber and cooling vegan yogurt make this salad a hydrating, guilt-free treat — perfect for hot summer days or as a refreshing side.

Quick & Effortless: With just a few simple ingredients, it comes together in minutes, making it a go-to for busy weekdays or last-minute meals.

Flavorful & Herbaceous: Fresh dill adds a fragrant, slightly tangy note that elevates the salad beyond basic cucumber dishes.

Textural Delight: Crushed roasted peanuts and sesame seeds provide a satisfying crunch, balancing the creamy yogurt and tender cucumbers.

Ingredient Notes

Cucumber: Choose firm, crisp cucumbers for the best crunch and hydrating freshness. Thin slicing enhances texture and allows the flavors to meld.

Vegan Yogurt: Provides creaminess and tang, acting as a cooling base that complements the herbs and spices. Coconut, soy, or almond yogurt all work well.

Fresh Dill: The star herb — fragrant, slightly sweet, and cooling. Finely chop for maximum flavor release.

Crushed Roasted Peanuts & Sesame Seeds: Adds crunch, nutty aroma, and visual appeal. Toast the seeds lightly for a deeper flavor.

Serving Suggestions

With Grains: Toss into quinoa or rice bowls for extra creaminess, freshness, and texture.

As a Side: Pairs beautifully with vegan curries, grain bowls, or roasted vegetables.

With Wraps or Sandwiches: Spread over flatbreads or wraps for a creamy, crunchy layer.

On Its Own: Serve chilled as a light, refreshing snack or appetizer.

Made this as a side for dinner and it ended up being the thing everyone kept going back to. It’s light but still flavorful, and the dill doesn’t overpower the cucumbers. Really nice balance and very refreshing.
